About Our Bakery
Our mission is to produce organic, quality long-fermented tasty breads. We use fermenting techniques rarely found in commercial bakeries, but commonly used before World War 2.
It is our belief that breads made using these time-tested techniques produce bread that is superior in taste, substance and quality and which keep better than the mass-produced fare on offer in supermarkets today.

The Real Bread Campaign
‘Real Bread’, as defined by the Real Bread Campaign is bread made with just four ingredients (or less) comprising: flour, salt, water and yeast. The vast majority of our bread is made with just those four ingredients. Nothing more than that, and all organic ingredients, to boot.
We are proud to be members of the Real Bread Campaign. Most of our bread is real bread as defined by the Campaign (with the exception of enriched dough products which add organic sugar and butter). We use no artificial additives, flour ‘improvers’, enzymes, emulsifiers, preservatives, processing aids or reducing agents. We just use: flour, water, salt and yeast for the majority of our breads. All bread meeting the Real Bread criteria are clearly marked.
